I installed CentOS and thought it would look like this:

But when I turn it on it asks me for the user and password I type it in and it logs me into a text thing :S like this..

Is there something I type, a command or something to get it like this:

How many cd's did you install it from. Since you may not have installed the desktop environment. Im not sure why because most distros will automatically do this. So try using:
yum install kdeor
yum install kde-baseWhich might work.

yum install kde says
gathering header information file(s) from server(s)
Server: CentOS-3 - Addons
the -base thing didn't do anything it just makes a flashing _.
I want to use linux to run server stuff on, though this was only one cd. If I get a desktop version can I still run cPanel and everything on it?
the other thing I can use is Fedora-Legacy (Red HatŪ) but I don't know which one to download to let me put a server on it, or, I'm not sure which has text or not.

Only 1 cd? Well I think you need to download the other cd's to get all the packages. Why not just install unbuntu server edition and give that ago. Thats only one cd.

Well firstly ubuntu is derived from Debian so therefore if it runs on debian it runs on Ubuntu. The list provided is very outdated and before ubuntu was popular so that is why it isnt listed. So it will work in Ubuntu Server Edition.

Linux server enviroments don't normally come with a GUI as it affects performance and is not required.

Well looking at it Ubuntu Server Edition isnt shipped with a GUI as most server centric editions arent. But this is fine with Ubuntu because its shipped with LAMP set up so you should be able to immediately run it and it wont impare on performance and space. But if you really want a GUI just use these commands:
sudo apt-get update
sudo apt-get install ubuntu-desktop

When I run sudo apt-get update
it connects to a website but then after it's done the screen is just-black..
sudo apt-get install ubuntu-desktop
Couldn't find package ubuntu-desktop
