Is it possible (Well most things are possible) to turn a Ubuntu Desktop edition into a Apache Web Server, so that you can host files, have mysql, php etc..?

Yes, but it would be easier just to get Ubuntu Server

Apache is a program, as is mysql.

Check if you have it installed, and just open a terminal and run it.
I think u type:

/etc/init.d/apache start

but i cant fully remember

Is XAMPP not compatible with Ubuntu?

XAMPP sucks, why install Linux if your going to skimp on some of the crappiest software ever. To overcome the crappiest software ever (badly made web servers, XAMPP.) you install MySQL, PHP, Apache etc... natively. HowToForge.com has some good tutorials for this kind of thing I use all the time. I am currently running CentOS though and have been very happy so far!
